I am a college soccer player and was diagnosed with osteitis pubis almost 6 months ago. I played through my season as best I could as pain permitted. Now that season is over, I have spent the past 2 months resting (no running, or soccer) and the last 3 weeks in physical therapy.
Any thoughts on treatments, stretches, vitamins, supplements or exercises that might help?

If you have access to get into a pool to exercise, that is a great tool to help increase your strength, power and endurance prior to trying to run again. I would hope that your therapist has already shown you multiple exercises for hip and core strength and general stretching. The best person to answer all of these questions is the treating PT since that person has specific knowledge of your needs/deficits to best direct your treatment plan.
